No heat, heavy yields, and the frustration of watching bell peppers refuse to turn red.

Green is unripe, not a variety
A green bell pepper is an immature red, yellow or orange one. It costs three to four extra weeks on the plant to let it colour up, and during that time the plant sets fewer new pods. Coloured peppers are sweeter, higher in vitamin C, and far more expensive in shops for exactly that reason. Decide which you want - you cannot have maximum yield and lots of colour from the same plant.
Banana peppers are the easier crop
Sweet banana peppers are thinner-walled, faster, more prolific and much less fussy than bells, and they pickle beautifully. Hungarian wax looks similar but is hot - check the label, since they are frequently confused at the garden centre.
Blossom end rot on bells
Bell peppers get the same sunken leathery patch as tomatoes, from the same cause: uneven water disrupting calcium delivery. Consistent deep watering and a good mulch prevent it; adding calcium to soil that already has enough does not.
Sunscald
Large-fruited sweet peppers are the most prone. Pods exposed to full afternoon sun develop pale papery sunken patches that then rot. Keep the plant's own foliage intact - never prune peppers the way you would a tomato - and provide light shade during a severe heatwave.
Standard pepper culture
Indoors eight to ten weeks ahead at 80-85F, out after nights hold 55F, eighteen to twenty-four inch spacing, moderate feeding shifting to low nitrogen at flowering, steady water, thick mulch.
Support
Bells especially become top-heavy and brittle - a loaded branch snaps at the crotch. Stake or cage at planting.
Blossom drop
Sustained heat over 90F or nights below 60F cause flowers to drop. A midsummer pause in fruit set is normal and production usually resumes in early autumn.
Pests and disease
Aphids, European corn borer entering under the calyx, pepper maggot, bacterial leaf spot, and phytophthora root rot in wet ground. Rotate away from nightshades on three years.
Harvest and storage
Cut, never pull. Green pods keep two weeks refrigerated; coloured ones about a week. Peppers freeze well diced with no blanching, roast and peel for freezing, and banana peppers pickle exceptionally well.
