Time it to the cucumbers
Dill heads are needed at exactly the moment the pickling cucumbers come in, and the two rarely coincide by accident. Sow dill two to three weeks after the cucumbers, and sow again a fortnight later as insurance, so you have flowering heads when you need them.
Direct sow only
Taprooted and poor at transplanting - disturbance causes it to bolt prematurely and stay small. Sow in place, barely covered, since the seed needs some light. It germinates in one to two weeks in warm soil.
Leaf versus seed varieties
Varieties bred for foliage (Fernleaf, Dukat) are slower to bolt and stay compact, which suits leaf harvest and containers. Varieties for seed and heads (Mammoth, Bouquet) run up quickly and produce large umbels. Choose based on what you actually want.
Succession sowing
For a continuous leaf supply, sow a short row every three weeks. Individual plants bolt fairly quickly in heat, and once flowering the leaf quality declines.
Support tall plants
Mammoth types reach four feet and blow over in summer storms, especially once the heavy seed heads form. A few stakes or growing them against a fence prevents a flattened row.
Black swallowtail caterpillars
As with parsley and fennel, dill is a host plant for black swallowtail larvae, which can strip it. Plant extra and share - the butterflies are worth having and the plants usually recover.
It self-sows enthusiastically
Let a few heads shed and you will have volunteer dill for years, usually appearing earlier and stronger than anything you deliberately sow. Most gardeners find this welcome; pull the excess as weeds.
Harvest and storage
Cut leaves any time once the plant has several fronds. For pickling, cut whole umbels when the flowers are fully open or the seeds just forming. For dill seed, wait until the heads turn tan, then cut and dry in a paper bag and rub the seed out. Fresh dill keeps under a week refrigerated, dries poorly, and freezes well chopped.
