Unlike a cantaloupe it does not slip from the vine, so you have to judge ripeness by hand.

It does not slip
A cantaloupe separates from the vine on its own when ripe - the "full slip" - which makes it easy. Honeydew does not. You have to judge it, and picking too early is the commonest failure, because honeydew has almost no starch reserve and does not sweeten at all after harvest.
How to tell it is ready
The skin changes from greenish-white to a creamy pale yellow and turns from smooth to slightly waxy or tacky to the touch. The blossom end gives to gentle thumb pressure and smells faintly sweet. The tendril nearest the fruit dries and browns. Use two or three of these signs together, not one.
A long warm season
Eighty to a hundred days and it wants heat throughout. Sow direct into 70F soil, or start in peat pots two to three weeks before last frost - melons hate root disturbance, so never bare-root transplant them. Black plastic mulch to warm the soil is genuinely worth it in zone 6b/7.
Room and soil
Vines run six to ten feet. Rich, well-drained soil on a mound, with generous compost. They can be trellised with fabric slings supporting each fruit, which saves space and improves airflow.
Water heavily, then stop
Consistent deep water while vines grow and fruit sizes. Then cut back sharply once fruit reaches full size and begins to colour - watering during ripening dilutes the sugars and is the second commonest reason for a bland melon.
Pollination
Bee-pollinated, with separate male and female flowers. Poor bee activity gives fruit that starts and shrivels. Hand-pollinate in the early morning if needed.
Pests and disease
Cucumber beetles transmit bacterial wilt, which collapses a vine irreversibly - row cover until flowering is the best defence. Squash bugs, aphids and powdery mildew from midsummer. Rotate cucurbits on three years.
Storage
Better than most melons: two to three weeks refrigerated whole, and it is the longest-keeping of the common melons. Cut fruit, three or four days.
