Nantes Carrot
Daucus carota subsp. sativus
Blunt-tipped, sweet and brittle. The best-eating carrot and the worst traveller.

Why it tastes best
Nantes types have a high sugar content, a very small tender core, and crisp brittle flesh. They are what most people mean by a good carrot. The same brittleness makes them snap in handling, which is why they are uncommon in shops and common in gardens.
Cylindrical with a blunt tip
The root is near-uniform in diameter from shoulder to a rounded tip, six to seven inches long. That shape needs reasonably deep loose soil, though less than an Imperator - eight inches of good tilth is enough.
Germination is the hard part
Seed is tiny, shallow and takes two to three weeks. The surface must not dry out at any point in that window. Cover the row with a board or damp burlap until seedlings show, or water lightly twice daily in warm weather.
Thin to two inches
Crowded carrots stay thin regardless of how long you leave them. Thin in the evening and remove the thinnings from the bed, since the crushed foliage smell attracts carrot rust fly.
No fresh manure
Fresh manure or heavy nitrogen causes forking, hairy roots and lots of top growth. Grow carrots in ground manured for a previous crop.
Water evenly
About an inch a week. A heavy soaking after a dry spell splits the roots - and Nantes, being brittle, splits more readily than the other types.
Rust fly and green shoulders
Carrot rust fly larvae tunnel the roots leaving rusty scarring; a two-foot mesh barrier or row cover from sowing prevents it. Shoulders exposed to light green and turn bitter - hill a little soil over them as they size up.
Harvest and storage
Pull at three-quarters to one inch across; oversized Nantes go woody and split. Twist the tops off at once or they draw moisture from the root. Two to four months in damp cold storage - shorter than a Danvers or Chantenay, which is the trade for the eating quality. Frost sweetens them considerably.
