Napa Cabbage
Brassica rapa subsp. pekinensis
A different species from ordinary cabbage, twice as fast, and it bolts if you sow it in spring.

Brassica rapa, not oleracea
Napa is more closely related to turnips and bok choy than to green cabbage. It grows twice as fast, has thin crisp ribs and tender leaves, and is much milder. It also behaves quite differently in the garden.
Grow it in autumn, not spring
Napa bolts readily when young plants experience cold followed by lengthening days - which is exactly what a spring sowing gets. Sow in midsummer, from late June to early August, for an autumn harvest. This one change is the difference between a crop and a bed of flower stalks.
Direct sow if you can
It has a taproot and transplant shock encourages bolting. Direct sowing and thinning gives the most reliable heads. If you must transplant, use cells and move them young, before they are rootbound.
Fast growth is the whole technique
Napa needs to grow quickly and without check to form a dense head. Rich soil, steady nitrogen, and consistent water. Any stress - drought, crowding, transplant shock, heat - gives a loose leafy plant instead of a head.
Pests are worse than on other brassicas
Napa's tender leaves attract flea beetles, cabbage worms, aphids and slugs heavily. Row cover from sowing is close to essential, and it also covers the crop through the worst of the late-summer flea beetle pressure.
Frost tolerance
It takes light frost well and the flavour improves, but a hard freeze damages the head. Harvest before the first serious freeze, or protect with row fabric.
Harvest
Cut at the base when the head feels firm and dense, at fifty to seventy days. It does not hold in the field the way a green cabbage does - harvest promptly once ready.
Storage and use
Wrapped, it keeps one to two months refrigerated - better than most fast greens. It is the classic kimchi cabbage, and the high water content and thin ribs also make it excellent raw in slaws and quick in stir-fries.
