A genuine hot-weather crop
Okra does essentially nothing until it is properly hot, then produces relentlessly through August and September when beans have quit and tomatoes are struggling. Do not judge it by its slow start.
Warm soil and direct sowing
Sow when soil is at least 70F - two to three weeks after last frost. Soaking or nicking the hard seed coat overnight improves germination markedly. Direct sowing is best; okra has a taproot and dislikes transplanting, though peat pots work if you need a head start.
Pick every single day
Pods go from tender to inedible fibre in about forty-eight hours in high summer. Three to four inches is the target for most varieties; anything longer is compost. This is not an exaggeration and it is the main reason people conclude they dislike okra.
Picking drives production
Every pod left to mature tells the plant to stop. Daily picking, even of pods you do not need, keeps it flowering. A well-picked plant produces for two months.
Wear sleeves and gloves
Most varieties carry fine irritating hairs on the pods and leaves that cause itching. Long sleeves and gloves make harvesting far more pleasant. Spineless varieties reduce but do not eliminate this.
Feeding and water
Moderate feeder. Too much nitrogen gives tall plants and few pods. Water deeply but okra is notably drought-tolerant once established.
Pests
Aphids on growing tips, stink bugs causing pitted pods, and corn earworm boring into pods. Root-knot nematodes are a real problem in sandy southern soils - rotate. Fusarium wilt appears in long-cropped ground.
Kitchen and storage
The mucilage that thickens gumbo is also what puts people off; high dry heat (roasting, grilling, frying) or acid (tomato, vinegar) minimises it, while slow moist cooking maximises it. Pods keep only two or three days in the fridge and freeze well whole or sliced after blanching.
