A biennial: leaves in year one, flowers and seed in year two, and then it is done.

Slow, patient germination
Three to four weeks is entirely normal, and the seed is notoriously erratic. Soaking overnight in warm water helps; assuming it has failed and re-sowing usually does not. Sow shallowly, keep consistently moist, and mark the row - many people dig up a perfectly good sowing in frustration.
Flat-leaf or curly
Flat-leaf (Italian) has a stronger, cleaner flavour and is better for cooking. Curly is milder, holds up better as a garnish, and is slightly hardier. Hamburg parsley is a third type grown for its edible parsnip-like root.
Treat it as an annual
Parsley is biennial: it makes leaves in year one, then flowers, sets seed and dies in year two. It overwinters reliably in zone 6b/7 and produces a welcome early spring flush, but bolts soon after and the leaves turn bitter. Sow fresh every year rather than relying on last year's plants.
Soil and feeding
Rich, moisture-retentive soil. It has a long taproot, so a deep bed suits it. Side-dress with nitrogen once or twice through the season to keep new leaves coming.
Harvest from the outside
Cut outer stems at the base, always leaving the central growing point and a good crown of young leaves. Cutting the whole plant back works but sets it back for weeks. Regular harvesting keeps it productive.
Black swallowtail caterpillars
Striking green, black and yellow caterpillars will strip parsley, dill and fennel. They become black swallowtail butterflies. Most gardeners plant a little extra and leave them alone - it is a fair trade, and they rarely kill an established plant.
Other pests
Aphids and, in wet weather, septoria leaf spot causing brown speckling. Carrot rust fly occasionally affects the root of Hamburg types.
Storage and use
Keeps up to two weeks standing in water in the fridge with a loose bag over the top - better than most soft herbs. It dries acceptably, unlike cilantro or basil, and freezes well chopped. The stems carry plenty of flavour and belong in stock rather than the compost.
