It keeps twice as long
Softneck garlic - Inchelium Red, California Early, silverskin and artichoke types - stores eight to twelve months against hardneck's four to six. The flexible neck dries down and seals the bulb properly. This is what supermarket garlic is, and it is the reason.
Braiding
Because the necks stay pliable, softneck can be braided while the tops are still slightly green during curing. A braid stores well, saves space, and is the traditional way to keep the year's crop.
More cloves, smaller and uneven
A softneck bulb carries ten to twenty cloves in several layers, of varying sizes, with fiddly small inner ones. Hardneck gives four to eight large uniform cloves in a single ring, which are far easier to peel. Trade convenience against storage life.
Milder flavour
Generally less pungent and less complex than hardneck, though good softneck varieties are perfectly flavourful. Hardneck is the choice for raw eating and for distinct varietal character.
Marginal in a hard winter
Softneck prefers milder winters and can produce small or poorly differentiated bulbs in a very cold one. In zone 6b/7 it usually works but is less reliable than hardneck - plant some of each and see which suits your ground.
Planting and mulch
Same as hardneck: autumn planting four to six weeks before hard freeze, largest cloves only, pointed end up, two to three inches deep, six inches apart, then four to six inches of straw mulch.
No scapes
Softneck rarely bolts, so there is no scape to cut - one less job, and one less crop. All the energy goes into the bulb.
Harvest, cure and store
Lift when the lower three or four leaves have browned and several above are still green, usually a little earlier than hardneck. Cure hanging in a dry airy shaded place for three to four weeks. Store at 55-65F, dry and dark. Do not refrigerate - cold triggers sprouting.
