Full ripeness is what makes the strands
The characteristic separation into spaghetti-like strands only develops in a fully mature fruit. Picked while the rind is still pale yellow or has green tinges, the flesh cooks to mush instead. Wait for uniform deep golden-yellow skin that a thumbnail cannot mark.
A long vine and a long season
Eighty-five to a hundred days and vines running eight to twelve feet. Sow direct after last frost into warm soil, or start in peat pots two weeks early. It can be trellised with fruit slings.
Heavy feeder
Compost-rich soil, mounded planting position, side-dress with a balanced feed once vines start running. Steady water through fruit development, easing off during ripening.
Pollination
As with all squash, the first flowers are male. Fruit that starts and shrivels was poorly pollinated. Hand-pollinate in the morning if bees are scarce.
Vine borer and squash bugs
C. pepo, so hollow-stemmed and highly susceptible to squash vine borer - wrap the stem base, use row cover to flowering, or make a July sowing. Squash bugs and cucumber beetles as usual; crush the bronze egg clusters.
Powdery mildew
Arrives midsummer and defoliates. As long as the fruit has sized up and started to colour it will usually finish, but heavy early mildew gives smaller, less sweet squash. Space widely and water at the base.
Harvest and curing
Cut with two to three inches of stem before a hard frost. Cure seven to ten days at around 80F to harden the rind, then store at 50-55F with air circulation. Two to three months is realistic.
Cooking
Halve lengthwise, scoop the seeds, and roast cut side down at 400F for forty minutes, or until a fork pulls the flesh into strands easily. Cutting it in rings rather than lengthwise gives longer strands, which is a small but real improvement.
